I saw the idea for these sweet cupcakes on Pinterest.
So when I spotted the rainbow candy in the grocery store I grabbed some.
I was just waiting for the right occasion to try making them.
How about the bake sale at the school fair?
I made
Vanilla Cream cupcakes (see recipe below!)
And used cream cheese frosting...tinted blue for the sky and stiffened with some corn starch (I ran out of confectioner's sugar) for the clouds.
I cut the rainbow candy in half and secured each end in the "clouds." A few of the rainbows slipped a bit, but only one needed its clouds removed and replaced. One tip, if you try these, is to make your cupcakes a little smaller than usual so that the baking cup gives a little support to the edge of the cloud.
They turned out really cute, tasted yummy and were a big hit at the fair...hooray!
Vanilla Cream Cupcakes
1 box white cake mix
8 oz cream soda
6 oz vanilla yogurt
Mix ingredients then bake as directed on cake mix box.
For decoration:
Separate your frosting: 2/3 in one bowl, 1/3 in another. Tint the 2/3 with 2 drops blue food coloring. Mix 11/2 Tbsp cornstarch into the 1/3 bowl. Frost cupcakes with blue frosting. Place cornstarch + frosting mixture into a small plastic bag and cut a small triangle from the corner of the bag (homemade pastry bag). Pipe "clouds" onto cupcakes. Cut rainbow candy ribbons in half (approx 3 inch pieces). Insert each end of the rainbow into a cloud.
These were great for the bake sale but would be terrific for a special birthday party too!
