As promised, here is the recipe for my Three Ingredient Cake.
This recipe was inspired by Lady with the Red Rocker's 2 Ingredient cake (which, by the way, is super delish).
The 2 ingredient cake bakes up very light and fluffy...yum!
But, sometimes I like to build and stack and sculpt my special birthday cakes, and I love using fondant. So fluffy doesn't always work. I need a cake with a bit more structure. Denser, but in a moist, scrumptious kind of way.
Well, this recipe is the perfect trifecta...Delicious, Sturdy and So EASY!
And it has a killer secret ingredient...
For Zack's Lego birthday cake I chose Yellow cake with vanilla & lemon-lime flavor.
I filled it with Cherry preserves and iced with cream cheese frosting.
Are you ready for the secret?
"Lemon-lime" flavor is secret code for Diet Sprite!
Intriguing...soda in cake. In the 2 ingredient cake that's all there is. Cake mix and soda. Light, fluffy, joyful!
In the Three Ingredient Cake: Cake mix, Soda and Yogurt (preferably rich, creamy, fat free, greek)
So, here's the general recipe:
1 box your favorite cake mix
8 ounces soda (whatever flavor sounds yummy with your cake mix)
6 ounces yogurt (nonfat or lowfat Greek - again, whatever flavor is appealing to you)
Mix together with electric mixer for 2 minutes. Bake using the instructions on the box. Frost and decorate.
For Zack's cake, I used:
1 box Yellow cake mix
8 oz Diet Sprite
6 oz Chobani nonfat greek yogurt
Mix. Bake. Decorate. Prepare yourself for the compliments. ENJOY!

Definitely less fat and cholesterol. I suppose you could argue against the healthiness of diet soda...but hey, LESS FAT! Thanks for stopping by!

DeleteWow - what a great design! Never saw a cake like that, the colours are amazing!
ReplyDeleteI've heard of adding a package of instant jello to moisten a cake but I'll have to give the soda and yogurt a try... healthier is always better. :)
